Oven Fries



1 1/4 pounds potatoes, cut into 1/2 in strips (works with sweet potatoes, as well)
3/4 t salt
1/2 t sugar
4 t oil
1 t seasoning blend of choice

Preheat oven to 450 degrees.
In a large bowl combine the potatoes, 1/4 t salt and the sugar then cover with cold water.


Soak 15 minutes, drain and blot dry.
In another large bowl, toss the potatoes with oil and seasonings. Place in a single layer on a baking sheet. Bake, turning the potatoes over as they brown, till cooked through and crisp, about 45 minutes.

Oven fries can be so good! I learned how to make them from Cooks Illustrated and it's very similar. Only real difference is you cover the fries for first half of the baking time, then uncover them for the second half.
